Rum Raisin Vanilla Cookies Sandwich Recipe

Ingredients
- 100g unsalted butter
- 1/4 cup caster sugar
- One egg yolk
- Three drops of vanilla extract
- One cup of plain flour
- 30g almond powder
- 1/2 teaspoon baking powder
- 80g white chocolate
- 80g softened butter
- 1/3 cup sultanas or raisins steeped in rum
How To Make the Cookie
- Place the softened butter and sugar in a large bowl and mix until light and smooth to make the cookies. Add the egg yolk and the vanilla extract and mix until creamy.
- Add the plain flour, almond powder, and baking powder and mix as you cut the butter mixture into flour. Use your hands to bring the mixture together into a dough.
- Place the dough between two sheets of baking paper, roll until 5mm thin, and refrigerate until firm. Cut out shapes.
- Place them on a baking tray lined with baking paper and bake at 170℃ for 15 minutes or until golden. Transfer to a wire rack to cool completely.
- Place the white chocolate in a heat-proof bowl to fill the raisin buttercream. Heat in the microwave or over simmering water in a saucepan, and melt until smooth.
- In a separate bowl, beat softened butter. Add the melted white chocolate and mix well. Add the raisins steeped in rum and mix to combine. Cool in the fridge, stirring occasionally, until firm enough to spread on the cookies.
- To assemble, take two well-cooled cookies and squeeze some buttercream filling to complete the delicious rum vanilla sandwich cookie.
