Yokan and Japanese jelly are timeless wagashi, traditional Japanese sweets with a long history. Over time, people began experimenting with various flavors, and even today, yokan and jelly retain their popularity.
TRIVIA
Which season do people usually enjoy mizu yokan?
Yokan is a wagashi made from adzuki, agar-agar, and sugar to form a firm, jelly-like block. It was originally eaten in temples by monks and Zen priests, but gradually gained popularity among aristocrats and warriors. Today, artisans infuse yokan with many flavors like matcha and chestnut, while seasonal yokan can be found throughout Japan. Sliced into squares or rectangles, it's enjoyed as a refined Japanese candy confectionery with a delicate balance of sweet and subtle flavors.
Traditional Japanese jelly, known as kingyoku, is particularly cherished in Japan's warmer months. Made by boiling agar and sugar, confectioners skillfully mold these delicate desserts with scenes of goldfish, maple leaves, cherry blossoms, or other nature-inspired elements. Notably, its refreshing nature and lack of refrigeration requirements add to its appeal.
Japanese pudding, known as purin, is a creamy custard dessert made with eggs, sugar, and milk, achieving a silky smooth texture through baking or steaming. Unique variations, including hojicha (roasted green tea), matcha, and strawberry flavors, provide delightful twists to this classic Japanese candy. Best served chilled, this sweet treat pairs well with green tea.
