When is mizu yokan typically enjoyed?
Yokan is a traditional Japanese dessert made from adzuki, agar-agar, and sugar to form a firm, jelly-like block. Originally, it was first eaten in temples by monks and zen priests, but gradually gained popularity among aristocrats and warriors. Today, yokan is infused with many flavors like matcha and chestnut, while seasonal yokan can be found throughout Japan. Sliced into squares or rectangles, it's enjoyed as a refined confection with a delicate balance of sweet and subtle flavors.
Traditional Japanese jelly, known as kingyoku, is particularly cherished in Japan's warmer months. Made by boiling agar and sugar, confectioners skillfully mold these delicate desserts with scenes of goldfish, maple leaves, cherry blossoms, or other nature-inspired elements. Notably, its refreshing nature and lack of refrigeration requirement add to its appeal.
