Taiyaki is a traditional fish-shaped wagashi, resembling tai or red sea bream, which is a symbol of luck and fortune in Japan. This cherished treat dates back to the Meiji Period, evolving from imagawayaki, a similar but round confection. Typically filled with deliciously sweet fillings such as red bean paste, custard, or chocolate, this popular street food features a crispy exterior and a soft interior.
Dorayaki is a wagashi consisting of two fluffy pancake-like layers that embrace a sweet red or white bean paste layer. Originating from the Edo period, this confection has evolved into a beloved snack and dessert with its harmonious blend of soft and sweet elements. Nowadays, you can find exciting twists to the original filling with flavors such as matcha (green tea), sakura (cherry blossoms), and various fruits.
