Cultivated in Asahina, Japan’s largest gyokuro-producing region, this ceremonial-grade matcha is made from stone-ground gyokuro leaves. It brews into a vibrant infusion, balancing a complex umami and subtle sweetness with a pleasant bitterness.

Brewing Method 
1. Add one stick of matcha to a tea bowl.
2. Pour in 30–40ml of water at 80°C (176°F).
3. Using a bamboo whisk (chasen), whisk quickly in an “M” or “W” motion.
4. Once a creamy foam forms, it’s ready to enjoy.

These traditionally-made wagashi capture the seasonal beauty of sakura. Each piece is a fusion of yokan, made from adzuki red bean paste and hozui, or Japanese-style marshmallows made with egg whites.
